Instant Pot…the most wildly popular kitchen appliance to hit the market since Vitamix. Everywhere I looked articles were touting the new wunderkind like it was this generation’s first refrigerator. I was hesitant to jump on the bandwagon. What could be better than my classic Le Creuset? Skeptical to the core, I imagined this new fad was developed merely for Crock Pot people. There’s nothing wrong with that, I just derive pleasure out of the process and social aspect of cooking. It’s cathartic. It’s inspiring and I revel in it. I doubted the Instant Pot could deliver the experience I craved each time I set out to craft a meal. Then one of my friends, a Cordon Bleu-trained chef, started gushing about the Instant Pot and the ease of sauté and reduction of sauces. I nearly swallowed my own fork. As the shock wore off, I realized I had been sticking my nose in the air simply because something was new. Sure, my antique Westinghouse fan will outlast any new piece of plastic on the market. I prefer my record player to deliver the warm character of vinyl to a state of the art sound system any day of the week. Nevertheless, the Instant Pot is here to stay and it has earned a solid place in my cookery. Why?
